Ricotta, fig & sesame bagel

Cheese and fruit are a great pairing – this toasted bagel combines ricotta with blackcurrant jam and fig, along with a crumbled sesame snap for texture

Ingredients
- 50g ricotta
- 1 tsp honey
- 1 toasted cinnamon raisin bagel (or 2 slices fruit bread)
- 1 tsp blackcurrant jam
- 1 sliced fig
- 1 sesame snap
Method
Mix the ricotta with the honey, then spread over the cut sides of the toasted cinnamon raisin bagel or fruit bread. Top one side with the blackcurrant jam and sliced fig, then crumble the sesame snap over the top before closing the sandwich.
