Ingredients
- 2 tsp rapeseed oil
- 1 tbsp sherry vinegar
- ¼ tsp wholegrain mustard
- 2 tsp maple syrup
- ? small red cabbage, shredded
- 6 ready-to-eat dried apricots, cut into strips
- 1 banana shallot, chopped
- 6 walnut halves, broken into pieces
- 2-3 tbsp roughly chopped parsley
- 100g piece of ham, pulled into pieces
Method
Mix the oil, vinegar, mustard and maple syrup in a bowl. Stir in the cabbage, apricots, shallot, walnuts and parsley. Toss well, then gently fold the ham through.
