Mincemeat & cheese toasties

Try a festive twist on the classic cheese toastie by piling in leftover mincemeat. It makes a quick lunch over Christmas

Ingredients
- 100g mature cheddar, grated
- 2 heaped tbsp mincemeat (check the label if you're vegetarian)
- 3 spring onions, sliced
- 4 slices sourdough
- 4 tsp mayonnaise
Tip
Vegetarian mincemeatVegetarian mincemeats are readily available in supermarkets, or make our 10-minute version.
Method
Mix the cheese with the mincemeat and spring onions. Spread each sourdough slice with 1 tsp of the mayonnaise. Put two of the slices mayo-side down on a board and spread the other side with the cheese mixture. Sandwich with the other slices so the mayonnaise is on the outside.
Heat a large non-stick frying pan over a medium heat. When hot, fry the toasties for 3-4 mins on each side, weighing them down with a heavy-based pan until crisp and golden and the cheese is melted. Cut in half and serve.
