Maple thyme carrots

Make these roasted carrots, flavoured with maple and thyme, in the air fryer for a side that’s ideal for a special occasion, such as Christmas dinner

Ingredients

  • 750g carrots (no need to peel), scrubbed, trimmed and halved lengthways if thick
  • 2 tbsp sunflower oil
  • 2 tbsp maple syrup
  • 1 tbsp thyme leaves
  • 2 tsp sherry vinegar

Method

  1. Heat the air fryer to 180C. Put the carrots in a bowl, drizzle over the oil and season well. Toss to coat, then tip into the air fryer and spread out evenly. Roast for 25-30 mins until the carrots are tender when pierced with a knife and starting to turn golden.

  2. Whisk the maple syrup, thyme and vinegar together in a small bowl, then season. Drizzle over the carrots and mix to coat. Roast for another 5-10 mins until sticky and glazed.
