Garlic & herb cod ‘kiev’ traybake

Ingredients
- 1kg new potatoes , cut into 5mm thick slices
- 2 tbsp vegetable oil
- 4 Morrisons Market Street 2 Cod Fillets or another white fish
- 50g Morrisons natural breadcrumbs
- lemon wedges , to serve
- 150g softened butter
- 4 garlic cloves , crushed
- a handful of soft herbs like basil, chives and parsley , finely chopped
Method
Heat the oven to 200C/180C fan/gas 6. Tip the potatoes into your largest roasting tray (or two smaller) and drizzle with the oil. Season, toss well, then spread out evenly. Roast for 25 mins, turning over halfway through cooking.
Meanwhile, mash the butter, garlic and herbs together in a bowl with some seasoning. Place the Morrisons Market Street Cod Fillets on top of the potatoes, spread the garlic butter over using a spoon, then sprinkle over the breadcrumbs. Bake for 15 mins until the cod is flaky and cooked, and the breadcrumbs are golden and toasted.
