Fresh cucumber & apple salad

Magic happens when you combine cool cucumbers and crunchy apples. This is a perfect side dish for summer picnics and barbecues. It’s addictively good and takes just minutes to make.

Ingredients
- 40g pistachios , crushed
- 2tbsp white wine vinegar
- 1tsp maple syrup
- 3tbsp extra virgin olive oil
- 1 cucumber , halved lengthways then halved crossways, then cut into 1cm pieces
- 1 Granny Smith apple , cut into half-moon slices
- 115g vegan feta , crumbled
- 3 radishes , thinly sliced
- 10g chopped fresh basil
- 2tbsp fresh mint leaves
- salt and pepper
Method
Put most of the pistachios (reserving some to garnish) in a food processor. Add the vinegar, maple syrup and oil, and blitz for a few seconds until slightly smooth. Season to taste with salt and black pepper.
Combine the remaining salad ingredients in a serving bowl. Pour the pistachio dressing over the top and gently fold through. Sprinkle with the remaining pistachios and season with more salt and black pepper.
