Beetroot Sabji

Ingredients
- 2-3 midsize Beetroots (boiled in lemon water)
- 10-12 curry leaves
- 2 whole red chillies
- 1 tsp mustard seeds
- 1 tsp urad dal (white lentils)
- 1/2 tsp red chilli powder
- 1.2 tsp turmeric powder
- Salt to taste
- 2 tbsp vegetable oil
Method
Heat the oil in a flat pan and add mustard seeds and urad dal, Saute until they sputter,
Add the curry leaves and whole red chilli (broken into 2 pieces) into the oil and saute until fragrant.
Cut the boiled beetroots into cubes and add into the pan. Saute for a couple of minutes.
Season with turmeric powder, red chilli powder and salt to taste. Mix well until all the spices are well blended.
You can squeeze some lemon and garnish with coriander leaves (Optional). Serve with chapatis.
