Bean & feta dip

Transform a can of white beans into this easy dip. Top with pickled onions to serve and enjoy as a snack or starter alongside pitta chips or crudités

Ingredients
- 1 small red onion
- ½ tsp each salt and caster sugar
- 3 tbsp cider vinegar
- 400g can white beans
- 200g feta
- 1 small crushed garlic clove
- ½ lemon, zested and 1 tbsp of the juice
- handful of soft herbs, such as chives, dill or parsley
- 1 tbsp chilli jam or caramelised onion chutney (optional)
- pitta chips , to serve (optional)
Method
Finely slice the red onion and mix in the salt, caster sugar and cider vinegar. Set aside to pickle for 20 mins. Tip the white beans and its liquid into a food processor. Add the feta, garlic clove, the lemon zest and juice, and blitz. Season to taste and stir through a handful of soft herbs, such as chives, dill or parsley. You can also mix in the chilli jam or caramelised onion chutney, if you like. Scatter over the pickled onions and serve with pitta chips.
