Air fryer French toast

Make French toast in an air fryer then pile on your favourite toppings. Finish with a sprinkle of icing sugar at Christmas to add a festive feel

Ingredients
- 1 egg
- 40ml whole milk
- 1 tbsp double cream
- ½ tsp vanilla extract
- pinch of ground cinnamon
- 2 thick slices of brioche
- 1 tbsp demerara sugar
- fruit and icing sugar or bacon, to serve (optional)
Method
Beat the egg, milk, cream, vanilla and cinnamon together with a pinch of salt. Pour into a shallow bowl. Heat the air fryer to 180C.
Line the base of the air fryer basket with a sheet of baking parchment. Dredge each piece of brioche in the egg mixture, making sure both sides are well coated, then carefully transfer to the lined air fryer basket. Sprinkle half the demerara sugar over the top and cook for 6-7 mins, then flip and sprinkle with the remaining sugar. Cook for a further 6-7 mins until crispy and golden. Serve sweet with berries and a dusting of icing sugar, or with crisp streaky bacon.
