Air-fryer chicken fajitas

Ingredients
- 2 chicken breasts
- 2 red, orange or yellow peppers , deseeded and sliced
- 1 large red onion , thickly sliced
- 1 tbsp olive oil
- 1 tbsp fajita or piri-piri seasoning
- 1 tsp dried oregano
- 4 wholemeal tortilla wraps
- 2 Little Gem lettuces , shredded
- 4 tbsp soured cream
- 1 avocado , skinned, stoned and chopped
- coriander leaves , to serve
- 1 lime , cut into 6 wedges
Method
Heat the air-fryer to 190C. Halve the chicken breasts horizontally then cut into 1cm-wide strips. Place in a large bowl with the peppers and onion, drizzle over the oil and toss well together. Sprinkle over the seasoning and oregano and mix until evenly coated.
Transfer to the air-fryer basket and cook for 15 mins, stirring once or twice until tender and cooked through.
Warm the tortilla wraps in a dry frying pan or microwave. Serve with the chicken and peppers, lettuce, soured cream, avocado and coriander in bowls for customisable wraps, with lime wedges for squeezing over.
