Air fryer apple pancakes
Treat yourself to apple pancakes for brunch or dessert at the weekend. Leave out the apples if you prefer, and enjoy with berries, maple syrup or ice cream

Ingredients
- neutral oil , for the tin
- 150g self-raising flour
- ½ tsp baking powder
- 2 tsp caster sugar
- 1 egg
- 200ml milk
- 1 apple , cored and very thinly sliced
- berries , maple syrup or ice cream, to serve (optional)
Method
Oil an 18cm cake tin and heat the air fryer to 200C. Mix the flour, baking powder, sugar and a pinch of salt together in a large bowl. Whisk the egg and milk together in a jug.
Create a well in the centre of the flour with the back of your spoon then add the milk mixture. Stir until just combined. Pour a quarter of the batter into the prepared tin, starting from the outside in, so there isn’t too much batter in the centre. Lay over a couple of apple slices and carefully put into the basket of the air fryer. Cook for 3-4 mins, until golden and a skewer inserted into the centre comes out clean.
Keep warm in a low oven while you cook the remaining pancakes. Serve with some berries and maple syrup drizzled over the top or a scoop of ice cream, if you like.
