Emirates Palace Mandarin Oriental introduces Strawfire by Chef Ross Shonhan

Chef Ross Shonhan, known for his work at Netsu Dubai, Zuma London, and Nobu Dallas, brings his innovative approach to Japanese cuisine to Strawfire. His experience in top kitchens and his previous ventures, including Bone Daddies and Shack-Fuyu in London, has earned him a reputation for pushing boundaries and creating memorable dining experiences.

The new venue introduces Warayaki, a traditional Japanese cooking method, to the UAE capital, combining the ancient technique with a modern dining experience. Warayaki, which originates from Japan’s Kochi Prefecture, involves cooking food over straw-fired flames, imparting a unique smokiness and depth of flavour to each dish. At Strawfire, Chef Shonhan will showcase a selection of dishes that highlight fresh, high-quality ingredients, all prepared over an open flame.

The restaurant’s design features five distinct dining spaces, each with its own atmosphere. One of the highlights is the Toyama Private Dining Room, inspired by Japan’s Toyama region. The room is anchored by a striking 7.3-meter-long synthetic Shimenawa rope—the largest of its kind ever made. This handcrafted rope, which symbolises protection and sanctity in Japanese culture, serves as a dramatic centrepiece above the dining table. The room’s walls and ceiling are adorned with hand-painted silk inspired by traditional Japanese art, including works by Katsushika Hokusai and Utagawa Hiroshige.

Guests are greeted upon arrival by the Tsukimi Lounge, designed to evoke the peaceful ambience of a full moon harvest. The main dining area, centred around an open grill, features golden drapery that reflects the flickering of flames, adding to the immersive experience. The interior design, with its handcrafted wood panels and custom furniture, complements the Warayaki cooking style, creating a unique atmosphere for diners.

Strawfire will offer a varied menu, with options including à la carte dishes, a signature tasting menu, and a Chef’s Omakase experience. To accompany the food, the restaurant will feature live entertainment, with a DJ playing Jazzy House and NU Disco on weekdays and a live jazz band on Fridays and Saturdays.
