Chef Mohamad Orfali, renowned for his groundbreaking work with Orfali Bros, is collaborating with Chef Abhiraj Khatwani of Yellow Monkey to bring a bold new dining concept to Dubai
Manao, located in Vita Wasl, offers a contemporary take on Thai-inspired cuisine, blending the rich traditions of Thai gastronomy with fresh, inventive techniques. This homegrown venture marks an exciting chapter for Dubai’s dining scene, led by two chefs whose shared passion for culinary exploration shines through in every detail.
Chef Abhiraj brings his personal journey to the forefront of Manao’s offerings, inspired by time spent in Thailand’s Udon Thani region. Immersing himself in local kitchens and learning from families, he developed a deep appreciation for authentic Thai cooking methods, which he now reimagines in a Dubai context. Guided by Chef Orfali’s mentorship, Manao’s menu showcases the versatility of Thai staples, especially rice, which is used in varied forms—fermented, grilled, steamed, sticky, and roasted—to create dishes that are layered with texture and flavour.
The restaurant features a dynamic open-kitchen concept, inviting guests to engage directly with the chefs as they prepare and present their creations. This collaborative approach fosters a unique dining environment, where chefs not only cook but also serve and interact with diners, bridging the gap between the kitchen and the table. Complementing the culinary experience, Manao offers innovative non-alcoholic juice pairings, developed in collaboration with Orfali Bros’ fermentation lab, that enhance the depth and balance of each dish.
At its core, Manao is a celebration of Thai cuisine through a modern lens, infused with the creativity and expertise of two of Dubai’s most talented chefs. From its bold flavours to its thoughtful dining concept, Manao offers an exciting new perspective on the possibilities of Thai-inspired food.
