Experience an unforgettable evening with live entertainment, spectacular dishes and beautifully crafted concoctions. Executive Group Chef Timothy Newton has reimagined the menu, offering exceptional new starters, salads, pasta, meat and fish dishes transporting diners to the French Riviera. Start with an array of small platters including Truffle pizza; Foie gras and confit duck with William pear chutney, medjool date and black tea purée and cep brioche; Crispy octopus with caper aioli; Courgette flowers with goat’s cheese, pine nuts, and truffle honey; and Aubergine parmigiana with Parmigiano Reggiano cream.
Raw dishes feature the Bagatelle tuna tartare with Espelette pepper dressing; Black Angus beef tartare with organic egg bottarga; Japanese yellowtail with red grapes and truffle vinaigrette; Canadian lobster ceviche with avocado, granny smith apple, tobiko, and jalapeño granita, and a selection of the finest caviar.
Tuck into salads and pasta, starring Burrata salad with figs, wagyu cecina and pistachio crumb; Stuffed beef tomato with fresh ricotta, black olive granola, tomato and basil consommé; Angel hair pasta with caviar and Piedmont hazelnut; and Josper roasted lobster linguini in spicy tomato sauce.
Follow with mains, featuring the succulent Grilled lamb rack with tomato and parmesan purée, Glazed lamb belly with violet artichoke; Herb salt-crusted chicken with tarragon; Duck breast with whipped foie gras, duck leg and Chicory tartelette with Madagascan pepper sauce. Seafood lovers can look forward to fish cooked with lemon leaves; Pan seared Scottish salmon with puffed potato, ikura, smoked salmon rillette, dill and horseradish veloute; or Grilled tiger prawns with courgette and basil fregola, confit Datterino tomato, and shellfish bisque.
End with desserts such as Millefeuille Tarte Tatin comprising homemade puff pastry, caramelised pink lady apples, Tahitian vanilla, apple caramel, and yogurt sorbet; William pear souffle with brown butter ice cream and Guanaja chocolate sauce; Tonka bean crème brûlée with violet solliès figs; or Jivara chocolate pizzetta, adorned with caramelised piedmont hazelnuts, to name a few.
