Curated by Chef Nicholas Cuadrado, the new offerings showcase the finest seasonal ingredients, drawing inspiration from Chef Nicholas’s recent journey through Greece. With over 20 years of experience in European culinary arts, Chef Nicholas is celebrated for his dedication to authenticity and quality.

Each year, he travels across the Mediterranean to personally select ingredients from trusted farmers and suppliers. This year’s journey took him to Greece, renowned for its rich culinary heritage, where Chef Nicholas sourced ingredients that epitomise the region’s flavours and sustainability.

One notable discovery was Cretan wild thyme honey, sourced from a small mountain farm where bees feed on seasonal herbs, producing honey with a distinct, fragrant flavour. This honey is a key ingredient in Café Bateel’s Puglian Burrata with grilled peaches, where it complements the creamy burrata and caramelised peaches, alongside heirloom tomatoes and a white balsamic herb dressing.

Inspired by the traditional Greek salads Chef Nicholas sampled during his travels, Café Bateel now offers its own version of the classic dish. Featuring Cretan cheese, barrel-aged feta, heirloom tomatoes, and Kalamata olives, the salad is enhanced with rye rusks, rock samphire, and a drizzle of extra virgin olive oil, finished with Bateel’s signature oak-aged date balsamic.

The new winter menu also includes other Mediterranean-inspired creations, such as Cacio E Pepe—rigatoni pasta in a rich Parmigiano Reggiano and Pecorino sauce, topped with pickled mustard seeds and cracked peppercorns. Head to your nearest Café Bateel to try these delicious dishes for yourself!
