¼ cucumber, sliced or cut into ribbons with a vegetable peeler
500ml tub lemon sorbet
soda water, to top up
2 mint sprigs, leaves picked
Get ahead and leave the fruit and Pimm’s steeping in the glasses in the fridge for up to an hour before your guests arrive, then add the sorbet, mint and sparkling water just before serving.
Take four large wine glasses and pour 50ml Pimm’s into each one, then divide the strawberries and cucumber between them. Put two scoops of lemon sorbet into each glass and top up with soda water. Garnish with mint and add colourful straws.
