Ingredients

  • 4 milk roll (or other soft white rolls)
  • 8 rashers back bacon, grilled or fried
  • 3 tomatoes, blanched, peeled and chopped
  • 50g brown sugar
  • 1 shallot, finely chopped
  • 1 tbsp malt vinegar
  • 1 tsp allspice
  • 1 tsp Worcestershire sauce
  • drop of Tabasco

Method

  1. To make the brown sauce, add all the ingredients to a medium saucepan with a teaspoon of salt, bring to the boil then simmer on a low heat for 30 mins, stirring occasionally to prevent it from sticking.

  2. Generously butter your milk rolls, add 2 rashers of bacon and a dollop of your homemade brown sauce to each butty.
